Put on an apron and ensure hands are clean.
Gather ingredients: salt, smoked paprika, garlic powder, black pepper, two serrano chilies, red onion, corn, mozzarella cheese, tomato, flour tortillas, two cloves of garlic, ground beef, and cilantro.
In a bowl, season extra lean ground beef with salt to taste, 1 teaspoon of garlic powder, 1 teaspoon of black pepper, and 1 teaspoon of smoked paprika.
Mince two cloves of fresh garlic and add them to the ground beef mixture.
Heat a pan over medium heat without adding any oil or liquid.
Cook the ground beef for about 10 to 15 minutes, breaking it apart and covering it to allow it to release its own juices.
Chop the red onion, serrano chilies, cilantro, and tomato while the beef cooks.
After 10-15 minutes, check the ground beef; it should be soft and moist with a little liquid.
Add the chopped red onion to the ground beef and stir to incorporate.
Next, add the chopped tomato, serrano chilies, and frozen corn to the beef mixture and stir well.
Cook for another 10 minutes, ensuring there are no liquids left in the pan.
Once cooked, turn off the heat and stir in the chopped cilantro, letting it sit to absorb the flavor.
Transfer the beef mixture to a plate to stop the cooking process.
In the same pan, place a flour tortilla and generously sprinkle mozzarella cheese on one half.
Add a portion of the ground beef mixture on top of the cheese.
Cook for about 2 minutes, then cover the tortilla to help the cheese melt.
After 2 minutes, flip the quesadilla over and cook until the cheese is visibly melting out of the sides.
Remove from the pan and slice into diamond shapes for serving.
Top with a dollop of sour cream before serving.
