10 to 12 olives
a couple of sprigs of cilantro
1/4 cup sofrito
1 packet of sazón with culantro

Heat 2 tablespoons of canola oil in a large pot over medium-high heat (setting 7 out of 10).

Add 5 seasoned chicken thighs to the pot and brown them for a couple of minutes on each side.

Once the chicken is browned, lower the heat and add 1 cup of tomato sauce, 1/2 teaspoon of oregano, 1/4 teaspoon of cumin, 4 cups of chicken stock, and 4 cups of water to the pot.

Add 10 to 12 olives, a couple of sprigs of cilantro, and 1/4 cup of sofrito to the pot.

Add the packet of sazón with culantro to the mixture.

Cover the pot and let it cook for at least 30 minutes until the chicken is tender.

After 30 minutes, drain the soaked rice and add it to the pot.

Cook for an additional 20 to 25 minutes until the rice is cooked.
