100 g unsalted butter
2 tablespoons olive oil
1 kilo (2.2 lb) beef mince

2 tablespoons (50 g) concentrated tomato paste
2 tablespoons (40 ml) Worcestershire sauce
250 ml (1 cup) red wine
250 ml (1 cup) beef or chicken stock
1 cup frozen peas
sea salt flakes

Grate the onion, celery, and carrot using a box grater.

Peel and chop 1 kilo of potatoes, then place them in a pot covered with cold water.

Bring the pot to a boil and cook the potatoes for 22-25 minutes until fork tender, seasoning with salt.

In a saucepan, combine 150 ml of milk and 100 g of unsalted butter over medium-high heat to warm and melt the butter.

In a large pan, heat 2 tablespoons of olive oil over high heat, then add 1 kilo of beef mince, seasoning with salt and cracked black pepper.

Cook the beef for 5-6 minutes until browned, then add the grated vegetables and garlic, along with 50 g of tomato paste, parsley, thyme, and 40 ml of Worcestershire sauce.

Cook for 5 minutes to soften the vegetables, then add 250 ml of red wine and reduce for 3-4 minutes.

Add 250 ml of beef or chicken stock and cook for 15 minutes over medium-low heat.

Drain the potatoes and mash them using a potato ricer or masher, then mix in the warmed milk and butter, along with 2 egg yolks, salt, and ground white pepper.

Check the beef mixture for moisture, adding more stock if necessary, then stir in 1 cup of frozen peas.

Transfer the beef mixture to a large roasting dish and spread it out evenly.

Spread the mashed potatoes over the beef, creating texture with a fork, and season the top with sea salt flakes and cracked black pepper.
