Taco Stuffed Peppers

3 large bell peppers
1 lb 93% lean ground beef
1 cup cooked rice
1 onion
2 cloves garlic
olive oil
taco seasoning
jarred salsa
yellow cheddar cheese
white cheddar cheese
tomato sauce

Cut the bell peppers in half lengthwise.

Microwave the bell peppers for 5-6 minutes or bake in the oven for 20 minutes with water and foil.

Cook rice for shy of 2 minutes until al dente.

Heat olive oil in a shallow Dutch oven.

Add ground beef and cook until browned.

Mince onion and garlic, add to the beef with a pinch of salt.

Cook onion and garlic until fragrant, about 4-5 minutes.

Add taco seasoning and stir for 30 seconds.

Add jarred salsa and turn off the heat.

Stir in 1 cup of cooked rice and mix well.

Let the filling cool and shred yellow and white cheddar cheese.

Season the inside of the cooked bell peppers.

Stuff the peppers with the filling and drizzle with tomato sauce.

Cover with parchment and aluminum foil and bake at 375°F for 30 minutes.

Remove foil, top with cheese, and bake for an additional 10 minutes until cheese is melted.
