The technique reflects a blend of African, Indigenous, and European influences, and is celebrated for its bold flavors and spicy heat. Today, jerk ribs are a staple at barbecues and festivals, enjoyed both locally and internationally, with variations appearing in many Caribbean and American cuisines.

Start by making the dry rub mixture using 6 teaspoons of allspice, 3/4 teaspoon of nutmeg, and 1 teaspoon of cinnamon powder.
Add 1 tablespoon of dried thyme, 2 teaspoons of red chili pepper flakes, 1 teaspoon of ginger powder, 2 tablespoons of Badia complete seasoning, 1 teaspoon of salt, and 2 tablespoons of brown sugar to the dry rub.
Whisk the dry rub ingredients together until well combined.
Pat the dry rub generously onto a half rack of ribs and rib tips, ensuring they are well coated.
Preheat the pellet grill to smoke, then set it to 325°F.
Once the grill reaches temperature, add the ribs and rib tips to the grill.
Cook the ribs for approximately 2 hours and 25 minutes, basting with a mixture of 1/2 cup orange juice, 2 tablespoons ketchup, and 1 teaspoon dark mushroom soy sauce every hour.
After cooking, check that the ribs are juicy and have a nice crust, with some slight char on the rib tips.
