Today, Berbere has gained popularity beyond Ethiopia, inspiring chefs and home cooks worldwide to explore its vibrant flavors in various dishes.
cayenne pepper

Start with 50 grams of paprika powder in a pan on low heat.
Add 2 teaspoons of coriander powder and 1 teaspoon of cumin to the pan.
Optionally add 1 teaspoon of sea salt.
Add 1/4 teaspoon of nutmeg, 1/2 teaspoon of ginger, and 1/4 teaspoon of cinnamon.
Stir in 1 teaspoon of turmeric and 1 teaspoon of garlic powder.
Grind up the remaining spices (1 teaspoon of peppercorns, 4 cardamom pods, fenugreek, and 4 cloves) in a coffee grinder.
Blitz the ground spices and add them to the mix in the pan.
Stir all spices in the warm pan for about 10 minutes.
Let the mixture cool and store it in an airtight jar.
