Bread dumplings, or knedlíky, are a staple of Czech cuisine, traditionally served with hearty dishes like goulash. They symbolize resourcefulness, utilizing stale bread to create a filling side dish. Today, they are enjoyed not only in the Czech Republic but also in various Central European countries, often with regional variations.

Whole grain bread adds fiber while day-old bread reduces waste.

Olive oil provides healthy fats, while margarine is often less expensive.
Warm up the milk in a bowl in the microwave for about 1 minute.
Add 1 teaspoon of sugar and 1 teaspoon of yeast to the warm milk and mix.
Let the yeast mixture rise for 10 minutes.
In a separate bowl, combine 3 and 2/3 cups of Wandra flour and 1 teaspoon of salt.
Add 1 egg to the flour mixture and mix well.
Add the yeast mixture to the flour and mix until combined, using hands if necessary.
If the dough is sticky, add more flour until it is not sticky.
Incorporate 2 cups of dried cubed bread into the dough and work it in until well mixed.
Let the dough rise for 1 and 1/2 hours in a warm place, covered with a towel.
After rising, divide the dough into three portions and shape into dumplings.
Let the shaped dumplings rise for another 10 minutes.
Prepare a pot of salted water and bring it to a boil.
Carefully place the first dumpling into the boiling water and cover the pot.
Cook for 10 minutes on one side, then flip and cook for another 10 minutes on the other side.
Remove the dumpling from the pot and poke it in a few places to release steam before serving.
