Cut the rolls into small cubes and add them to a large bowl.
Cut the onions into cubes.
Chop the parsley finely.
Melt the butter in the pan, add the onions and fry until translucent.
Add the parsley and fry with the onions for about a minute.
Shut off the heat and add the milk to the pan.
Pour the mixture over the bread cubes and mix well.
Add the eggs to a bowl and beat lightly with salt and pepper.
Pour the egg mixture over the bread cubes and mix again very well.
Let the mixture rest for about 10 to 15 minutes.
Knead the mixture well for a couple of minutes.
Add the breadcrumbs and knead for another couple of minutes.
Wet your hands slightly with cold water and form tennis ball sized dumplings.
In a large pot, bring water to a simmer and add salt.
Lower the dumplings into the water and let them simmer for about 15 to 20 minutes.
Remove the dumplings from the pot and they are ready to serve.
