Melt the chocolate in a heatproof bowl over simmering water until completely melted.
In a saucepan, combine granulated sugar and heavy cream, then heat until boiling.
Remove from heat and immediately add a portion of the hot cream mixture to the egg yolks, mixing quickly to avoid cooking the yolks.
Pour the egg yolk mixture back into the saucepan and heat gently, stirring until it thickens, ensuring it doesn't scramble.
Pour the thickened egg yolk mixture into a mixing bowl and whip at high speed until pale and creamy.
Ensure the chocolate is at room temperature and not too hot or cold before combining.
Add a small amount of the whipped egg yolk mixture to the chocolate and mix, then gradually add the rest and mix gently.
Fold in whipped cream in increments, being careful not to add it all at once to maintain the mousse's texture.
Once combined, spoon the mousse into serving dishes and refrigerate until completely chilled and firm.
