Tap trees to collect sap, approximately 2 inches deep into the tree.

Empty sap containers daily to prevent overflow.

Use a boiling pan made from a standard deep hotel steam table pan.

Prepare the evaporator setup using cinder blocks and a chimney to draw smoke away from syrup.

Fill the boiling pan with about 4 gallons of sap to prevent boiling over.

Move the pan over to the fire to start boiling the sap.

Combine pans as sap boils down, moving boiled sap to another pan and adding fresh sap to the starting pan.

Finish boiling the sap indoors for better control using a thermometer.

Monitor the temperature until it reaches 104 degrees Celsius for syrupy consistency.

Strain the syrup after reaching the desired temperature.
