1 cup Sugar
3/4 cup water
Vanilla essence (optional)
1 tbsp brown Sugar
1 tbsp lemon juice

In a boiler add 1 cup of sugar with 3/4 cup of water and mix it.

Add vanilla essence, brown sugar, and lemon juice (so that sugar doesn’t get crystallized).

Mix continuously till the sugar dissolves completely.

Cook 3 to 4 minutes on medium flame.

Then in a separate boiler add the 3/4 cup sugar and let it melt completely.

Keep stirring regularly to avoid burning.

As soon as caramel begins to have a dark color and comes to a boil, immediately add the sugar syrup to it.

After adding the syrup, cook for 1 minute, then turn off the flame to avoid overcooking.
