2 cups granulated sugar
1 cup light brown sugar
1/4 cup honey or corn syrup
1 1/2 cups hot water
1 teaspoon maple extract
1 teaspoon vanilla extract

Combine 2 cups granulated sugar, 1 cup brown sugar, 1/4 cup honey and 1 1/2 cups hot water in a large saucepan over medium-heat.

Bring to a boil. Turn heat to medium-low and continue to simmer for 8-10 minutes, stirring frequently.

Remove from heat and let sit for 5 minutes.

Stir in 1 teaspoon maple and 1 teaspoon vanilla extract.

Serve over pancakes or allow to cool and then place in jars.

Store in a covered jar in the refrigerator for 1-2 months.
