Thai Peanut Chicken

1/2 cup peanut butter
1/4 cup chopped peanuts
1/2 cup coconut cream or coconut milk
1/3 cup water
1 1/2 Tbsp sugar
1 Tblsp red curry paste
1 Tblsp fish sauce
1 tsp soy sauce
2 lbs chopped chicken (boneless, skinless breasts)
2 tsp fish sauce
2 tsp sugar
1/4 cup sliced/chopped red onions
1 Tblsp lime juice
1 tsp msg (optional)
1/2 cup minced green onions or cilantro
Chopped Kiffir lime leaves (optional)

Simmer peanut butter, coconut cream (or coconut milk), water, sugar, red curry paste, fish sauce, and soy sauce to make the peanut dressing.

In a separate pan, cook the chopped chicken with fish sauce, sugar, red onions, and lime juice until fully cooked.

Serve the chicken in a bowl topped with the peanut dressing and garnished with minced green onions or cilantro, Kiffir lime leaves, and your choice of rice, cabbage, and bell peppers.
