Thai Peanut Chicken

1 lb chicken breast
1/4 cup dark soy sauce
1/2 cup natural peanut butter
1/4 cup runny honey
2 tbsp lime juice
1/4 cup coriander (for garnish)
1/4 cup crushed peanuts (for garnish)
1 tsp chili (to taste)
2 cups rice (for serving)
2 cups steamed vegetables (for serving)

Add dark soy sauce into a bowl.

Add natural peanut butter to the bowl.

Add runny honey to the mixture.

Add lime juice to the mixture (or rice wine vinegar if lime juice is unavailable).

Mix the sauce ingredients together.

Marinate the chicken breast in the sauce briefly before cooking.

Place the marinated chicken breast in the oven.

Cook the chicken in the oven for 35 minutes.

After 35 minutes, remove the chicken and add the remaining sauce.

Return the chicken to the oven for an additional 15 minutes.

Once cooked, sprinkle coriander on top of the chicken.
