2/3 cup creamy peanut butter
1 cup low-sodium chicken broth
1/3 cup soy sauce
1.5 pounds boneless skinless chicken thighs
black pepper
garlic powder
dried minced onions
1 cup shredded zucchini
1 red pepper
1/2 cup fresh chopped cilantro
juice of 1/2 lime

Add 2/3 cup creamy peanut butter to the slow cooker.

Pour in 1 cup of low-sodium chicken broth.

Add 1/3 cup soy sauce.

Season 1.5 pounds of boneless skinless chicken thighs with black pepper, garlic powder, and dried minced onions, then place in the slow cooker.

Add 1 cup of shredded zucchini and 1 sliced red pepper to the slow cooker.

Pour the peanut sauce over the chicken and vegetables.
