Thai Peanut Chicken

0.5 cup red bell peppers
1 tablespoon garlic
1 tablespoon ginger
1 teaspoon red hot chili pepper flakes
0.33 cup creamy peanut butter
0.5 cup chicken stock
1 tablespoon rice wine vinegar
1 tablespoon fish sauce
1.5 tablespoons soy sauce
lime juice
oil for cooking
fresh chopped cilantro

Heat a wok on medium-high heat.

Add oil around the wok until it starts to smoke.

Add 1 tablespoon of fresh chopped ginger and 1 tablespoon of fresh chopped garlic; cook for about 10 seconds.

Add 0.5 pound of chopped diced chicken breast to the wok and stir-fry for about 2 minutes.

Add 0.5 cup of red bell peppers to the chicken and cook together for another minute, keeping the peppers crunchy.

In a bowl, mix together 0.33 cup of creamy peanut butter, 1 tablespoon of rice wine vinegar, 1 tablespoon of fish sauce, 1.5 tablespoons of soy sauce, 1 teaspoon of red chili pepper flakes, and 0.5 cup of chicken stock until smooth.

Pour the peanut sauce into the wok with the chicken and red bell peppers, tossing until thickened.

Squeeze lime juice over the dish to enhance flavor.

Serve the Thai peanut chicken over a plate of long grain white rice.
