Nutritional yeast is lower in fat and adds a cheesy flavor.
Cut the tops off the broccoli florets.
Boil water with a little salt and add the broccoli, covering it to boil for 4 minutes.
Strain the broccoli and save the cooking water.
Place the broccoli in a Ninja blender.
Add about half a cup of the saved cooking water to the blender and pulse before pureeing.
Adjust the consistency by adding a little more water if needed, up to 3/4 of a cup total.
Add goat cheese and walnuts to the pureed soup for texture and flavor.
Drizzle olive oil on top before serving.
