Remove scallion, thyme, garlic, and pimento seeds from the chicken that was seasoned and refrigerated overnight.

Preheat the oven to 375°F (190°C).

Prepare an aluminum pan (or baking dish) by adding the scallion, thyme, garlic, and pimento seeds to the bottom of the pan.

Place the chicken on top of the seasonings in the pan.

Add 1/2 cup of jerk seasoning over the chicken and rub it in thoroughly to coat the chicken evenly.

Transfer the chicken to the aluminum pan, ensuring it's well coated with the seasoning.

Add a little bit of water to the sides of the aluminum pan to prevent sticking or burning.

Bake the chicken in the oven for 45 minutes, then check for doneness; if still pink, flip the chicken to the other side.

Scoop some of the excess seasonings from the bottom of the pan onto the chicken after flipping.

Continue baking for another 30 minutes until the chicken is charred and crisp.

After 20 more minutes, check the chicken; it should be tender and crisp. Remove from the oven.
