Panzanella Salad

1 x small loaf of sourdough bread
3 tbsp olive oil
2 tbsp shredded parmesan
1 tsp parsley
2 x mini cucumbers
½ cup cherry tomatoes
½ cup chopped red onion
1 cup sweet peppers, sliced
1 cup Yo Mama’s Italian Dressing

Slice the sourdough bread into cubes and place into a large salad bowl

Drizzle with olive oil and sprinkle with parmesan cheese and parsley. Mix thoroughly

Place the bread into a baking pan and bake at 350F for 15 minutes or until golden

While the bread is toasting, slice the cucumbers into coins and set aside

Slice the cherry tomatoes in half and set aside

Out of the oven, place the bread into a bowl and add in the cucumbers, tomatoes, red onion, sweet peppers and Yo Mama’s Italian Dressing

Mix thoroughly

Place into a salad bowl and enjoy!
