Turkish Gözleme with Spinach

Today, it has gained popularity worldwide, with variations reflecting local tastes and ingredients, making it a beloved dish in many cultures.

Make a well in the center of 2.5 cups flour.
Add 1 cup water, ½ teaspoon salt, and ¼ teaspoon yeast to the well.
Start kneading the dough until it becomes medium-hard.
Add 1 tablespoon more flour if needed to achieve medium-hard dough.
Cover the dough and let it rest for 30 minutes.
Beat 5 eggs with 1 teaspoon of salt.
Melt 50 grams of butter in a preheated pan and cook the eggs while stirring.
Transfer the cooked eggs to a bowl and let them cool.
Chop 1 onion into small pieces and add it to the cooled eggs, mixing well.
After 30 minutes, sprinkle flour on the table and divide the dough into 4 equal parts.
Make 4 balls of dough and cover them to rest for 10 minutes.
After 10 minutes, sprinkle flour on the table again and roll out the dough balls with a rolling pin.
Spread melted butter all over the rolled-out dough.
Place the egg and onion filling on one half of the dough and fold it over.
Gently press the edges to seal and roll it out slightly to make it bigger.
In a preheated and buttered pan, cook the gözleme on low to medium heat, brushing the top and bottom with butter and turning it over until both sides are golden brown.
