Start by preparing the grind seasoning and cutting up the chicken.
Season the chicken with black pepper, salt, and grind seasoning, and mix well.
Cut the carrots into cubes and chop the onions.
Preheat a large heavy iron pot and add a little vegetable oil.
Measure 5 cups of rice (2 and 1/2 lbs) but do not wash it yet.
Melt sugar in the hot pot, stirring until it bubbles up.
Once the sugar is melted, add the seasoned chicken to the pot and let it brown.
After the chicken is browned, add the chopped carrots and onions to the pot and mix well.
Add the rice to the pot and stir to combine with the chicken and vegetables.
Add black-eyed peas and coconut milk powder, stirring to combine.
Add the Maggi taste makers and adjust the seasoning with salt and black pepper.
Add enough water to barely cover the rice and bring to a boil.
Once boiling, reduce the heat and let it simmer for 18-20 minutes, checking the liquid level occasionally.
Taste for seasoning and adjust as necessary during cooking.
After cooking, let the pelau rest before serving.
