Welcome back everyone to another episode of Cooking With Carassauga. Today we bring you another fun recipe to try out. Inspired by the country of Trinidad our next cuisine demo is on how to make Curry Beef and Potatoes. If you are craving some island flavour then this is a must-try recipe. Give it a try and let us know how it turns out. CURRIED BEEF AND POTATO 2 Β½ lbs. of cubed beef 2 tsp salt 1 tsp black pepper 2 tbsp minced green seasoning 3 tbsp curry powder 2 tsp minced garlic 1/4 cup sliced onions 2 tbsp oil 2 cups water 2lbs potato METHOD Cut meat into cubes and season with salt, pepper and green seasoning Mix curry powder with ΒΌ cup water and fry in hot oil with garlic and onions for 1 min. Add beef and stir well to coat well in curry, cook for 3 min. Add hot water, cover and simmer until tender approx. 30 – 40 min. Add potato and cook until potato is soft and most liquid is absorbed Adjust salt and hot pepper to taste Serve with rice or roti
