Drain the water from the can of whole kernel corn and place the corn in a bowl.
Combine the drained whole kernel corn with one package of Jiffy corn muffin mix in the bowl.
Preheat the oven to 350 degrees Fahrenheit.
Add 1 cup of sour cream to the bowl and mix well.
Add 2 room temperature eggs to the mixture and combine.
Add the entire can of cream style corn to the bowl without draining it.
Add 1 teaspoon of pure vanilla extract to the mixture.
Melt 1 stick of unsalted butter and let it cool, then add it to the mixture and combine.
Fold in 2 cups of cheddar cheese into the batter.
Grease a 9x13 baking pan with butter flavored cooking spray.
Pour the mixture into the greased baking pan.
Optionally, add spices like onion powder or garlic powder to the mixture before baking.
Bake in the preheated oven on the middle rack for 45 minutes at 350 degrees Fahrenheit.
Let the casserole settle for at least 20 minutes before cutting into it.
