2 tablespoons canola oil
1/2 cup water

Add 1 small onion, 4 cloves of garlic, and a small piece of ginger to the skillet.

Add 1 tablespoon of tomato paste and 1 tablespoon of kasseri to the skillet.

Add the chicken (2 chicken legs, 2 thighs, 2 drumsticks) to the skillet and mix well.

Cover the skillet and cook on low heat for about 5 minutes.

After 5 minutes, turn the chicken over and add 1/2 cup of water to the skillet.

Taste the sauce and add an additional 1/2 teaspoon of salt if needed.

Cover the skillet and let it cook for another 5 minutes.

Check the chicken after 2 minutes to see how it's doing, then cover it again.

Continue cooking until the 1/2 cup of water has completely dried up, which should take about 20 minutes total for a cooking time of 25 minutes.
