Light coconut milk reduces calories while maintaining flavor

1

Fill a pot with water and add split peas and smoked turkey wings cut into pieces.

2

Bring to a boil and let it cook for about 35 minutes, placing a spoon on top to prevent boiling over.

3

Chop the onion using a slap chop gadget.

4

Season the chicken pieces with chopped garlic, scallion, onion, chicken bouillon powder, black pepper, and dried marjoram; mix well and let marinate.

5

Check the split peas; they should crumble when pressed but not be mushy.

6

Saute the marinated chicken in oil for about 10 minutes.

7

Add a can of coconut milk to the chicken and stir to break up bits stuck to the pot; let simmer for 5-7 minutes.

8

Strain the liquid from the cooked split peas and smoked turkey to avoid adding too much liquid.

9

Add the split peas and smoked turkey to the coconut milk mixture and stir together.

10

Add some of the strained liquid from the peas and turkey to the pot.

11

Bring to a boil, then add thyme and bay leaf; tie the thyme in a bundle for easy removal later.

12

Cover the pot, lower the heat, and allow to cook, checking periodically and adding liquid as needed.

13

Once finished, the rice should be perfectly cooked and the peas soft but whole.
