Baked Tuscan Chicken & Shrimp Pasta

Fresh tomatoes are often cheaper and lighter in flavor.
Boil water in a pot and add 1 tbsp of salt and 1 tbsp of chicken bouillon.
Add pasta to the boiling water and stir. Boil according to package instructions (about 7 to 10 minutes).
Cut 2 boneless skinless chicken breasts into bite-sized pieces, removing any fat.
Drizzle olive oil on the chicken and mix with seasoning.
Set the seasoned chicken aside.
Pat the shrimp dry to remove moisture, drizzle with olive oil, and mix with seasoning.
Drain the pasta once it's al dente to stop the cooking process.
In a skillet, use oil from sundried tomatoes and add shrimp. Cook for about 2 to 4 minutes, flipping halfway through.
Remove shrimp from skillet and set aside.
In the same skillet, add more oil if needed and add the chicken. Cook for 3 to 6 minutes until golden brown on both sides.
Transfer cooked chicken to a bowl and set aside.
In the skillet, add 2 tbsp of unsalted butter and allow it to melt.
Add 1 small chopped onion and chopped sundried tomatoes, and optionally sweet grape tomatoes. Mix.
Add pepper flakes and cook until tomatoes start to soften.
Add garlic last to avoid burning, and mix until aromatic.
Pour in 1 cup of heavy whipping cream and 1/2 cup of evaporated milk, mixing well.
Add 3 tbsp of cream cheese and mix until melted and creamy.
Add the remaining seasoning mix and adjust salt and pepper to taste.
Add cooked pasta to the sauce and mix until well combined.
Preheat oven to 350°F.
Add shrimp and half of the chicken to the pasta mixture, reserving some shrimp for topping.
Transfer the pasta mixture to a baking dish, layering with cheese (Kobe jack and mozzarella).
Add remaining chicken and shrimp on top, then add more cheese if desired.
Bake in the oven for about 30 minutes.
Remove from oven and let cool slightly before serving.
