Tomato Bruschetta

4 large ripe tomatoes
1 small red onion
2 cloves of garlic
80 mL extra virgin olive oil
rustic bread (2 to 4 slices)

Cut the tomatoes into quarters and remove the seeds.

Dice the flesh of the tomatoes and place them in a bowl.

Peel and dice the red onion and add it to the bowl.

Peel one clove of garlic and grate it finely, then add it to the bowl.

Cut the other clove of garlic in half and set it aside.

Add 80 mL of extra virgin olive oil to the bowl and season with salt and pepper.

Mix everything together until combined.

Toast the rustic bread slices in a hot dry frying or griddle pan over medium heat.

Rub the hot toast on one side with the halved garlic clove.

Pile the fresh tomato mixture on top of the toast.

Tear fresh basil leaves over the top.
