2 tbsp Sugar
3 Good quality firm and ripe Tomatoes
1/4 cup Onion chopped
1 tbsp Fresh basil leaves
1/4 cup Mozzarella cheese cubes
2 tbsp Extra virgin Olive oil
Salt to taste
French bread slices or Baguette slices

Balsamic vinegar can provide a tangy flavor, while a homemade reduction is cost-effective.

In a small sauce pan, add sugar into the Balsamic Vinegar and heat them over medium heat until it boils. Continue to cook for 4 to 5 minutes until the sauce is reduced by half. Stir occasionally. Be sure to keep an eye on it because it can burn quickly. You will know it is done if it coats the back of a spoon.

Remove from the heat. Let it cool completely.

Take a mixing bowl. Add chopped tomatoes, chopped onion, basil leaves, mozzarella cheese cubes, salt, and extra virgin olive oil.

Mix well, cover it, and let it rest for 30 minutes in the refrigerator.

Meanwhile, take slices of bread, apply some olive oil on the sides, and bake it in the preheated oven at 350 degrees F for about 10 minutes or until golden brown on both sides.

Let it cool down.

Put spoonful of bruschetta mixture on top of the bread slice and drizzle some balsamic vinegar.
