Carnival Ears, or Orejas de Carnaval, are a beloved Spanish pastry traditionally enjoyed during the Carnival season. These sweet, crispy treats are often made to celebrate the festive atmosphere, symbolizing joy and indulgence. While they are most popular in Spain, variations can be found in other cultures, each adding their unique twist to this delightful dessert.

Mix flour, baking powder, and salt in a bowl.
In a separate bowl, whisk eggs, water, sugar, lemon zest, and vanilla extract until combined.
Gradually add the wet mixture to the dry ingredients, stirring until a dough forms.
Knead the dough on a floured surface until smooth, about 5-7 minutes.
Cover the dough with a cloth and let it rest for 30 minutes.
Roll out the dough to about 1/8 inch thick on a floured surface.
Cut the dough into ear shapes, about 4 inches long and 2 inches wide.
Heat vegetable oil in a deep pan over medium heat until shimmering.
Fry the dough pieces in batches until golden brown, about 2-3 minutes per side.
Remove from oil and drain on paper towels.
Sprinkle with powdered sugar and cinnamon while still warm.
Serve immediately for best texture.
