Clean oxtail with lemon juice, vinegar, and cold water.

Season oxtail with oil, mixed herbs, salt, Spice Jamaica red seasoning, black pepper, curry powder, and green seasoning; let marinate for at least 15 minutes.

In a pot, heat oil and add brown sugar; caramelize for about 5 minutes.

Add seasoned oxtail to the pot without stirring; cover for 5 minutes to allow juices to release.
