Nutritional yeast adds a cheesy flavor with fewer calories.

1

Heat a pan over medium heat and pour in extra virgin olive oil.

2

Add minced white onions to the pan and cook for 2 minutes.

3

Lower the heat to achieve gradual caramelization, stirring every 3-5 minutes to avoid burning the onions.

4

Once the onions are medium golden, add garlic paste and turn the heat back to high, cooking for another 1-2 minutes.

5

Add water (or chicken/beef stock), crushed tomatoes, and tomato sauce to the pan, mixing well.

6

Bring the mixture to a boil, then lower the heat to a simmer for 15-20 minutes.

7

After 16 minutes, check the sauce which should have moderately reduced in quantity.

8

Add a pinch of thyme, diced eggplants, diced zucchini, and green bell peppers to the sauce, increasing the heat to high and mixing well.

9

After 10 minutes, add pre-cooked wholewheat spaghetti pasta to the pan, mixing thoroughly with the sauce.

10

Transfer the pasta to a serving plate and sprinkle with fresh basil, freshly chopped parsley, a drizzle of extra virgin olive oil, and freshly grated Parmesan cheese.
