Cajun chicken jambalaya recipe

Chicken Jambalaya
Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.
Heat olive oil in a large pot over medium heat.
Add the diced chicken and sausage, cooking until browned, about 5-7 minutes.
Stir in the onion, bell pepper, celery, and garlic; sauté until the vegetables are tender, about 5 minutes.
Add the rice, diced tomatoes (with juice), chicken broth, Cajun seasoning, salt, black pepper, and cayenne pepper (if using).
Bring the mixture to a boil, then reduce heat to low and cover.
Simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
Remove from heat and let it sit covered for an additional 5 minutes.
Fluff the jambalaya with a fork and garnish with chopped green onions before serving.
