1 lb chicken breast, diced
1/2 lb smoked sausage, sliced
1 cup long-grain rice
1 can (14.5 oz) diced tomatoes
1 medium onion, chopped
1 bell pepper, chopped
2 stalks celery, chopped
3 cloves garlic, minced
4 cups chicken broth
2 tsp Cajun seasoning
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp cayenne pepper (optional)
2 tbsp olive oil
1/4 cup green onions, chopped (for garnish)

Heat olive oil in a large pot over medium heat.

Add the diced chicken and sausage, cooking until browned, about 5-7 minutes.

Stir in the onion, bell pepper, celery, and garlic; sauté until the vegetables are tender, about 5 minutes.

Add the rice, diced tomatoes (with juice), chicken broth, Cajun seasoning, salt, black pepper, and cayenne pepper (if using).
