Chicken Jambalaya

2 teaspoons dried oregano

1/4 cup olive oil
1 cup uncooked rice (Japanese short grain)
1 onion, chopped
2 red bell peppers, chopped
12 ounces (340 grams) smoky sausages, sliced
1 pound (450 grams) chicken, cut into bite-sized pieces
1 can chopped tomatoes
2 cups chicken stock
8 ounces (230 grams) mozzarella cheese, grated

Heat 1/4 cup olive oil in a large pot with a thick bottom.

Add 1 chopped onion and 1/2 teaspoon salt, cooking for 5 to 8 minutes until softened.

Add 12 ounces of sliced smoky sausages and 1 pound of bite-sized chicken pieces to the pot.

Sprinkle in 1 tablespoon paprika and 2 teaspoons dried oregano, stirring to combine.

Cook for another 5 to 8 minutes until the chicken and sausages are browned.

Add 1 cup of uncooked rice to the pot, stirring it in with the other ingredients.

Pour in 1 can of chopped tomatoes and 2 chopped red bell peppers, mixing well.

Add 2 cups of chicken stock to the pot and bring to a simmer.

Cover the pot and let it simmer for 20 minutes, stirring occasionally to prevent sticking.

After 20 minutes, remove from heat and stir in 8 ounces of grated mozzarella cheese until melted.
