Chicken Jambalaya

1 1/2 pounds boneless skinless chicken breast cut into bite-size pieces
2 tablespoons Cajun seasoning divided
3 tablespoons olive oil divided
1 pound Andouille sausage sliced into rounds
1/2 onion diced
2 stalks celery diced
1 red bell pepper
1 green bell pepper
2 cloves garlic minced
1 can 14.5 ounces crushed tomatoes
1 teaspoon dried oregano
2 cups chicken broth
1 cup white rice

Heat 1 1/2 tablespoons of olive oil in a large pot over medium heat.

Add the chicken pieces and 1 tablespoon of Cajun seasoning, cooking until browned.

Remove the chicken and set aside.

In the same pot, add the remaining olive oil, onion, celery, and bell peppers, sautéing until softened.

Stir in the garlic and cook for another minute.

Add the Andouille sausage and cook until browned.

Stir in the crushed tomatoes, chicken broth, remaining Cajun seasoning, oregano, and rice.

Bring to a boil, then reduce heat and simmer until the rice is cooked and liquid is absorbed.
