Chicken Jambalaya

2 tsp Smoked paprika
2 tsp Garlic granules
2 tsp Onion powder
1 tsp Chili powder
2 tsp Salt
300g Chicken breast fillets
150g Prawns
3 Hotdogs sliced
6 Tomato
1 Paprika Pepper
1 Scotch Bonnet
1 Onion
2 Garlic cloves
Oil
1 Chopped onion
2 Chopped garlic cloves
100g Tomato purée
1 Tbsp Aromat seasonings or chicken seasonings
1 tsp Salt
1 tsp thyme
4 Cups Rice
2 Cup Chicken Stock
2 Spring onion chopped

Prepare the spice mix by combining smoked paprika, garlic granules, onion powder, chili powder, and salt.

Add 1 tsp of the spice mix to the chicken breast fillets, prawns, and sliced hotdogs.

Blend the pepper mix ingredients: tomatoes, paprika pepper, scotch bonnet, onion, and garlic cloves until smooth.

In a pan, heat oil and sauté the chopped onion and garlic cloves until fragrant.

Add the blended pepper mix to the pan and cook for a few minutes.

Stir in the tomato purée, aromat seasonings, salt, thyme, rice, and chicken stock.

Bring to a boil, then reduce heat and simmer until the rice is cooked and has absorbed the liquid.

Garnish with chopped spring onions before serving.
