Cut the dragon fruit in half and scoop out the flesh.
Blend the dragon fruit flesh until smooth.
In a saucepan, combine coconut milk, sugar, lime juice, and salt.
Heat the mixture over medium heat until the sugar dissolves, stirring occasionally.
In a small bowl, mix cornstarch with water to create a slurry.
Add the cornstarch slurry to the saucepan and cook until thickened, about 2-3 minutes.
Remove the saucepan from heat and stir in the blended dragon fruit.
Add vanilla extract and mix until well combined.
Let the mixture cool to room temperature.
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
Transfer the churned ice cream to a container and freeze for at least 4 hours.
Scoop and serve the ice cream, garnished with fresh dragon fruit slices if desired.
