Traditionally, it’s a communal dish, served with crusty bread for dipping, reflecting the local seafood bounty. Today, cioppino is enjoyed across the U.S., with variations incorporating different seafood and spices, making it a beloved comfort food.

Using bouillon cubes is a cost-effective way to achieve a similar flavor.
Put 28 ounces of fire roasted diced tomatoes into the crock pot.
Add 1 pound of diced yellow potatoes to the crock pot.
Add 1 small diced onion to the crock pot.
Add 1 diced jalapeno pepper to the crock pot for added heat.
Add 3 cloves of minced garlic to the crock pot.
Stir in 1 tablespoon of tomato paste into the mixture.
Add a concoction of seasonings: basil, thyme, oregano, crushed red pepper, and creole seasoning to the crock pot.
Pour in 4 cups of seafood stock into the crock pot and mix well to break up the tomato paste.
Set the crock pot to high and cook for 2 to 3 hours until the potatoes are tender.
After about 2.5 hours, check the stew and stir it.
Add 1 pound each of scallops, shrimp, and crawfish tails to the crock pot.
Stir the seafood into the stew and let it cook for an additional 30 to 60 minutes until the seafood is cooked through.
If the stew is too watery, add 3 tablespoons of cornstarch slurry to thicken it up.
After 45 minutes, check the consistency of the stew and let it simmer longer if needed.
Taste the stew and adjust seasoning with more cajun seasoning and pepper if necessary.
