Cioppino Fisherman's Stew

Cultural Context

Cioppino originated in San Francisco, developed by Italian fishermen who created this stew using the catch of the day. Traditionally, it’s a communal dish, served with crusty bread for dipping, reflecting the local seafood bounty. Today, cioppino is enjoyed across the U.S., with variations incorporating different seafood and spices, making it a beloved comfort food.

white wine

🥗Healthier: non-alcoholic wine

💰Cheaper: chicken broth

Chicken broth is a more affordable option that can add depth to the stew.

fish stock

🥗Healthier: homemade vegetable stock

💰Cheaper: water + bouillon cubes

Using bouillon cubes is a cost-effective way to achieve a similar flavor.

1

Heat olive oil in a pot over medium heat.

2

Add chopped onions, hot peppers, celery, and salt; sauté until onions are soft and translucent.

3

Stir in finely chopped garlic and cook for a few minutes.

4

Add tomato paste and cook on the bottom of the pot until it gets nice and tomatoey.

5

Pour in 1 cup of white wine to deglaze the pot, scraping up any tomato paste stuck to the bottom.

6

Add bay leaves, oregano, thyme, and basil; rub the herbs between your hands as you add them.

7

Allow the mixture to simmer for about 5 minutes to let the flavors meld and the wine cook off.

8

Add 1 can of diced tomatoes, 2 cups of water, and 1 cup of chicken broth; raise the heat to bring to a bubble, then reduce to a simmer and cover for 30 minutes.

9

After 30 minutes, add 1 pound of chopped white fish, squid, shrimp, and clams; let simmer for about 7.5 minutes.

10

Turn off the heat and squeeze in juice from 1/2 a lemon before serving.
