Drain the potatoes and let them cool down for a while.
Separate the egg whites from the yolks using the eggshell.
Once the potatoes are cool, peel them easily with your fingers.
Chop the peeled potatoes and place them in a bowl.
Add cubed butter to the potatoes and mash them well with a fork until smooth.
Mix in the egg yolks, a pinch of salt, and freshly ground black pepper until homogeneous.
Refrigerate the mixture for 1-2 hours or freeze for 20 minutes to firm up the mixture.
In a pan, heat a drizzle of oil over medium heat.
Add finely chopped onion and a pinch of salt to help it cook faster; sauté for about 5 minutes until translucent.
Add ground beef and break it apart with a spoon, cooking until no longer pink.
Stir in tomato sauce and dried oregano; mix well and simmer on low for about 5 minutes.
Take a portion of the potato mixture and flatten it in your palm.
Add a tablespoon of the meat filling in the center and optionally some cheese.
Cover the filling with a larger portion of potato and shape it into a ball.
Roll the potato ball in flour, then dip it in beaten egg with a pinch of salt, ensuring it's well coated.
Coat the ball in breadcrumbs, making sure it's fully covered.
Repeat the process until all balls are formed and coated.
Fry the balls in hot oil until golden brown, about 5 minutes, ensuring the oil is not too hot to cook the filling thoroughly.
