1 tbsp vegetable oil
2 x 7oz - 200g beef steaks (Rib eye, tenderloin, sirloin)
1 shallot
20 cherry tomatoes (4oz 120g)
2 small cucumbers
1 large red chili, finely sliced
¼ cup sliced spring onion
½ cup mint leaves
¼ cup coriander leaves
1 tbsp soy sauce
1 tsp brown sugar
Cracked black pepper
3 tbsp fish sauce
1 tbsp brown sugar
2 limes (juiced)
1 tbsp grapeseed oil
1 red chili

In a large mixing bowl, combine the marinade ingredients: soy sauce, brown sugar, and cracked black pepper. Add the steaks and set aside to marinate for two hours.

For the dressing, in a separate mixing bowl, add the fish sauce, lime juice, brown sugar, and half of the finely chopped chili. Whisk together until the sugar has dissolved.

In a large mixing bowl, add the thinly sliced shallot and the cut cherry tomatoes. Slice the cucumber in half, remove the seeds, and cut into pieces. Add finely chopped chilies, shredded mint leaves, chopped spring onion, Thai basil, and coriander leaves. Add the dressing and mix well.

Add oil to a frying pan or ideally use a griddle pan over high heat. Once the oil is hot, sear the steaks for 3 to 4 minutes on each side until cooked medium rare. Remove the steaks from the heat and leave to rest for 10 minutes covered with foil and a kitchen towel.

Slice the steaks finely, place them over the top of the salad, and drizzle the rest of the dressing.
