Preheat the oven to 180°C (360°F).

Brush a 24 cm baking tray with oil.

In a saucepan, cook 1 litre of milk over low heat.

Stir in 120 g of sugar, 100 g of fine semolina, lemon zest, 2 tbsp lemon juice, and a pinch of salt until thickened.

Add 2 eggs and 2 tbsp of cornstarch to the mixture and stir well.

Pour the mixture into the prepared baking tray.

Mix 1 egg yolk with 1 tsp of milk and brush it over the top of the mixture.
