  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh cilantro
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup enchilada sauce
  • 1/2 cup shredded cheese (cheddar or Mexican blend)

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, cilantro, garlic powder, onion powder, cumin, chili powder, salt, and black pepper. Mix until well combined.
  3. 3Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  4. 4Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and browned on the outside.
  5. 5While the meatballs are baking, heat the enchilada sauce in a saucepan over medium heat until warmed through.
  6. 6Once the meatballs are done, remove them from the oven and place them in a baking dish.
  7. 7Pour the warmed enchilada sauce over the meatballs, ensuring they are well coated.
  8. 8Sprinkle the shredded cheese on top of the meatballs and sauce.
  9. 9Return the baking dish to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
