1

Welcome to the kitchen, today we will make kıymalı pide.

2

Prepare the dough: In a bowl, combine 5 cups of flour, 1 cup of milk, 1 tablespoon of sugar, 1 teaspoon of salt, and 1 tablespoon of yeast that has been soaked in warm water.

3

Mix the ingredients together, adding water gradually if needed, but be careful not to make the dough too soft.

4

Knead the dough until it becomes soft and elastic, using a little oil on your hands to prevent sticking.

5

Cover the dough and let it rise until it has doubled in size.

6

Prepare the filling: Use 800 grams of ground meat, and you can adjust the quantity as desired.

7

Chop 1 red bell pepper, 3 cloves of garlic, 4 green peppers, 4 tomatoes, and 2 onions into small pieces.

8

Add 1 tablespoon of pepper paste and 1 tablespoon of tomato paste to the mixture.

9

Season the filling with 2 tablespoons of red pepper flakes, black pepper, and salt, then mix well.

10

Add half a tea glass of vegetable oil to the filling mixture, or you can use butter if preferred.

11

Once the dough has risen, take it out and shape it into small balls, depending on the size of the pide you want to make.

12

Roll out each ball into an elongated shape, ensuring the edges are slightly thicker to hold the filling.

13

Place the filling inside the rolled-out dough, fold the edges over to seal it, and place on a baking tray lined with parchment paper.

14

Preheat the oven to 190 degrees Celsius and bake the pide for about 10 minutes or until golden brown.

15

Brush the tops with egg yolk before baking to prevent them from drying out and to achieve a nice color.

16

While the first batch is baking, prepare the next batch of pide.

17

Once baked, you can add cheese on top if desired, and cover with a cloth to keep warm.
