Start with about a pound of ground beef, 80/20 for better flavor.
Form one patty from about a third of the ground beef, flattening it out as thin as possible.
Shape the patty into a round shape, making it larger to account for shrinkage during cooking.
Take another portion of ground beef and form a smaller patty to use as the lid.
Season the patties with kosher salt and fresh cracked pepper.
Place cheese in the center of the larger patty, then cover with the smaller patty and seal the edges tightly.
Preheat the grill on high heat.
Place the patties on the grill and cook for about 3 minutes on one side before flipping.
After flipping, give the patties a quarter turn to create grill marks and cook for another 3 minutes.
Check that the cheese is staying inside the patties while cooking.
Close the grill lid to help cook the burgers evenly and achieve a medium doneness.
Prepare toppings: grill tomatoes and onions with a little olive oil.
Assemble the burgers with garlic mayo, lettuce, grilled tomatoes, grilled onions, and jalapenos as desired.
Cut the burgers in half to check the cheese oozing out and serve immediately.
