TACO MACARONI AND CHEESE Recipe| One Pot 30 Minute Meal

Turn on a large skillet or Dutch oven to medium-high heat.

Add 1.25 pounds of ground beef to the skillet and start browning it.

Slice mixed colors of bell peppers and chop 1 medium onion while the beef is browning.

Add the sliced bell peppers to the skillet with the ground beef.

Chop and add 3 cloves of garlic to the skillet after the beef is browned.

Season the mixture with 3 tablespoons of taco seasoning and stir.

Add 4 ounces of diced green chilies and 14 ounces of diced tomatoes (juice included) to the skillet.

Pour in 3 cups of chicken broth and raise the heat to high to bring to a boil.

Once boiling, add 12 ounces of uncooked elbow pasta to the skillet and stir.

Reduce heat to low, cover, and cook for 12 to 15 minutes, stirring occasionally and checking liquid levels.

After 14 minutes, check that the pasta is tender and add half a cup of chicken broth if needed.

Turn off the burner and add 2 cups of shredded sharp cheddar cheese to the mixture, stirring until melted.
