Buy frozen lemongrass from the Asian supermarket.
Smash the frozen lemongrass and a piece of fresh ginger.
Add the smashed ginger and lemongrass to a pot with a lot of sugar and water to make a simple syrup.
Bring the mixture to a boil and let it simmer for about 30 minutes.
Taste the syrup to check if it's perfect and set it aside to cool down.
Prepare a coconut panna cotta using full fat coconut milk, AGA AA, vanilla sugar, and sugar, heating it for about 3 minutes.
Pat dry firm tofu and tear it into chunks instead of cutting it into cubes.
Add corn starch, salt, and oil to the torn tofu chunks.
Slice eggplant into thick slices, season with salt, and drizzle with oil.
Bake the tofu and eggplant in the preheated oven for about 20 minutes.
Sauté garlic and ginger briefly for maximum flavor, then add soy sauce, rice vinegar, and maple syrup to create a glaze for the eggplant.
Pop the glazed eggplant back in the oven for a couple of minutes to caramelize the sugars.
Make homemade noodles with flour, salt, and water, resting the dough before rolling it out thinly.
Bring water to a boil and cook the freshly made noodles for about 1 minute, stirring to prevent sticking.
