Measure 1/3 cup bulgur and wash it 3-4 times until clean.
Dice the tomatoes and set them aside.
Wash the mint thoroughly and pick off the leaves, discarding the stems.
Wash the parsley well, trim off the tough stems, and finely chop the leaves.
Finely dice the cucumbers and add them to the bowl.
Chop the mint as finely as possible and add it to the bowl with the parsley.
If using, add pomegranate to elevate the flavor.
Season with olive oil and salt, then mix everything together.
Serve with lettuce leaves for wrapping.
