Use coarse bulgur and place it in a pan to heat for about 5 minutes until soft.
Add a pinch of salt to the bulgur while heating.
Prepare a dressing by mixing 1/2 cup of olive oil, salt to taste, 1 teaspoon of freshly ground cumin, and the juice of 1/2 lemon.
Stir the dressing ingredients together.
Peel and deseed the cucumber, then chop it finely.
Chop the parsley finely.
Combine the chopped cucumber, parsley, and cooled bulgur in a bowl.
Add the dressing to the bowl and stir everything together.
Top with some diced tomato, olives, and a sprinkle of sumac.
