Italian Chicken Parmigiana

Today, it's a favorite in homes and restaurants around the world, celebrated for its comforting combination of crispy chicken, rich tomato sauce, and gooey cheese.

Heat 2 tablespoons of olive oil in a pan.
Add 1 small diced yellow onion and stir for 3-4 minutes until softened.
Add 3 cloves of garlic and sauté for 30-45 seconds until fragrant.
Add 1 can of whole San Marzano tomatoes, squeezing them to break them up.
Simmer the sauce for 30 minutes, stirring occasionally.
In the meantime, prepare the chicken by placing it in a bag and adding a little oil to prevent tearing while pounding.
Pound the chicken breasts until thin for crispiness.
Prepare a dredging station with seasoned flour (salt, pepper, garlic powder), beaten eggs, and Sriracha panko breadcrumbs.
Dredge the chicken in flour, then dip in the egg, allowing excess to drip off, and finally coat in Sriracha panko.
Fry the breaded chicken in oil heated to 365-370°F for about 3-4 minutes per side until golden brown.
Remove the chicken and let it drain on a tray, keeping it warm in the oven.
Season the sauce with salt and pepper to taste after it has simmered.
Assemble the chicken in cast iron pans, topping with the sauce and cheese before broiling.
