Sweat 1 cup of onions in a pan for 2-3 minutes until translucent.

Add Campbell's tomato with basil and oregano, Pace chunky mild salsa, and some water to the pan and cook for 15-20 minutes.

Flatten chicken breasts to about 1/2 inch thick using a meat hammer between two pieces of plastic or in a bag.

Mix breadcrumbs and parmesan cheese together by hand.

Dredge chicken in beaten eggs, shaking off excess, then coat in the breadcrumb mixture.

Fry the breaded chicken in oil until browned on both sides.

Line the bottom of a casserole dish with the sauce.

Add the fried chicken to the dish and top with remaining sauce.

Sprinkle grated mozzarella and more parmesan on top.

Bake at 375°F for about 12 minutes.
